Antonio Paoli is currently Full Professor of Exercise and Sport Sciences at the Department of Biomedical Sciences of the University of Padova. He graduated from the I.S.E.F. (Higher Institute of Physical Education) in Bologna (Padova campus) in 1989, in 2004, again in Padova, he graduated in Medicine and Surgery and later (2008) specialized in Sports Medicine in Pavia.

In 2011 he became a university researcher and subsequently, in 2013 associate professor and in 2018 Full Professor, again at the University of Padova. Since 2017 he has been Director of the First-cycle/Bachelor's degree course in Sports Science and since 2020 Director of the Second-cycle/Master's degree course in Science and Techniques of Preventive and Adapted Physical Activity. He was the Rettore's Delegate for Sport and Wellness from 2015 to 2021. He is a member of the Brain, Mind and Computer Sciences PhD Board of the University of Padova. He is also Catedrático Extraordinario de Entrenamiento de Fuerza y Nutrición Deportiva y Director de Cátedra at UCAM - Catholic University of Murcia (Spain) and Leading Foreign Scientist at the N.I.Lobachevsky State University of Nizhny Novgorod (Russia).

Author of more than 200 articles published in international peer review journals (H-Index 43, from Google Scholar), 3 monographs and several book chapters, he directs the Laboratory of Nutrition and Exercise Physiology (NUTEXlab) at the Department of Biomedical Sciences. His research fields are mainly the physiology of exercise and skeletal muscle, training aimed at weight control and hypertrophy, the biomechanics of exercises, the effects of physical exercise on health and nutrition with particular reference to the ketogenic diet and fasting. He is a member of the editorial board of several international journals and is an evaluator of national and European funding agencies. Since October 2017 he has held the position of Director of the ESNS (European Sport Nutrition Society) and since February 2018 that of Director of SISMeS (Italian Society of Exercise and Sports Sciences).
