Prof. Sara Spilimbergo is a Professor of Chemical Engineering at the University of Padova. After graduating in the M.D. in Chemical Engineering in 1998 and obtaining her PhD in Chemical Engineering in 2003, she starts working as Assistant professor of Chemical Engineering at the University of Trento from 2004 to 2014. Since 2014 Sara Spilimbergo is Associate Professor of Chemical Engineering at the University of Padova.

RESEARCH
Sara focuses her research on the foodstuff field, specifically about the investigation of supercritical CO2 processes as low-temperature method of pasteurization for liquid and solid foodstuff. She is also researching an innovative drying technique for food and biological matrixes and a novel method for biopolymers production.
Sara also received funding and served as national leader for many national and European projects. She collaborates as consultant with several food and pharmaceutical companies as:

TEACHING
Sara’s teaching experience is extended in four different universities: University of Padova, University of Trento, University of Verona and University of Udine and it includes the following courses:

HONORS
Designed by Pfizer Inc. as quality expert review of a project concerning the use of supercritical CO2 for sterilization of an active pharmaceutical ingredient to be submitted at EMEA (European Medicines Evaluation Agency).
Nominated as a member of the International Committee in the following:

Research Area

My research activity is mainly addressed to the investigation of supercritical CO2 processes, in particular:
• Low-temperature pasteurization for liquid and solid foodstuff
• Innovative drying technique for food and biological matrixes
• Novel method for biopolymers production



Thesis proposals

The thesis proposed within my research group (Superunit) are experimental ones and the main topics are low temperature and high-pressure pasteurization and drying. The research period can be defined according to the student’s need. The lab is placed in the Industrial Engineering department, Padova.

Some thesis projects that have been assigned recently are listed below:

-Study of an innovative high-pressure carbon dioxide pasteurization treatment of solid matrices.
-Supercritical carbon dioxide drying of tuna fillet: optimization and quality study. (In collaboration with the Universidade Federal do Rio de Janeiro)
-Development and optimization of an innovative high-pressure pasteurization method of pre-packaged food products.
-Microbial inactivation on different food matrices during supercritical CO2 drying.
-Use of ultrasounds technologies to detect foreign bodies in poultry meat. (In collaboration with the Universitat Politecnica de Valencia)
